Bitter gourd is very beneficial for health. It helps in controlling diabetes, maintaining good digestion and detoxifying the body. In such a situation, stuffed bitter gourd is such a recipe which many people like to eat but people do not make this recipe because of its bitterness. In such a situation, let us tell you today a special recipe for making stuffed bitter gourd, which is not only healthy but is also so tasty and crispy that whether children or adults, everyone will keep licking their fingers. In this recipe, the bitter gourd is spicy from inside and golden crispy from outside. Besides, it also has some easy tips and tricks. Due to which it becomes even more tasty.
Easy way to make spicy stuffed bitter gourd
1. To make stuffed bitter gourd, first wash the bitter gourds thoroughly, then wipe them with a clean cloth and peel their peel gently. Now make a long incision in each bitter gourd, but keep in mind that it should be connected at the bottom so that the bitter gourd does not break. Now with the help of a small spoon or hand, take out the seeds and pulp from inside the bitter gourd. If you want, you can add the soft part of these extracted seeds to the spices.
2. Apply light salt on bitter gourd and keep it for 20 to 30 minutes. After this wash them thoroughly with water. This reduces the bitterness to a great extent.
3. After this, mix dry spices in a bowl. Like coriander powder, fennel, cumin powder, red chilli, turmeric, dry mango powder and salt. If you want, you can also add a little mustard oil in it so that the spices bind well.
4. Fill the masala well inside each bitter gourd and if necessary, press it with your hand so that the masala does not come out. Now tie each bitter gourd lightly with a thread so that the bitter gourd does not open while frying.
5. Now heat oil in a wide pan or kadhai. Start frying the stuffed bitter gourds on medium flame. Keep stirring the bitter gourds every 2 to 3 minutes so that they get cooked from all sides and turn golden. When the bitter gourd becomes crisp from outside and soft from inside, the bitter gourd is ready.
6. After this, add some more oil in the same pan. Now add chopped onions and fry well, then add fried bitter gourds and stir on low flame for 4 to 5 minutes so that the taste of onion gets mixed well in the bitter gourds. If some masala is left then you can add it on top. Lastly, while serving the bitter gourds, open their thread, sprinkle some green coriander on top and you can serve them with roti, paratha, or dal-rice.
