After bursting, this gel spreads between the peel and the ground. This gel is made of water, sugar and protein. Because of this it becomes a smooth mixture. This is the reason why the grip on the surface of the foot suddenly ends.

This discovery was so unique that the researchers were awarded the Ig Nobel Prize. Why are banana peels different from the peels of other fruits?
The peels of all fruits are not the same. Apple and orange peels also contain moisture. But they do not contain the polysaccharide-rich gel found in banana peels. Because of this difference, the level of friction is slightly higher. The friction coefficient of apple peel is about 0.1.
