Nowadays, eating out has become an important part of our lives. Be it weekend, any holiday or tiredness after office, we often go out to eat at a hotel, restaurant or dhaba with our family or friends. When we go to a restaurant, we feel happy seeing the decoration, AC air and clean tables. Have you ever wondered how clean is the kitchen where your food is being prepared?

Recently, India’s food safety agency FSSAI (Food Safety and Standards Authority of India) has made such a disclosure, which you will be surprised to know. This news is very important for all those people who often eat outside.

The hidden truth inside the kitchen

FSSAI team inspected many hotels, dhabas and food stalls in the country. A scary thing came to light in this investigation. Officials found that at many places, knives and blades were being used for cooking and cutting vegetables, which were completely damaged. Knives were found in the kitchen which were rusty. Many knives were broken in the middle, their edges were worn and the paint on the handle of some knives was coming off and falling into the food. When this condition was seen in the kitchens of shining hotels from outside, the food department immediately came into action.

Strict advisory issued on 15 June 2026

In view of this serious negligence, FSSAI issued a very strict advisory for all food businesses across the country on 15 June 2026. The department has made it clear that playing with people’s health of any kind will not be tolerated.

What is the danger of a rusty or broken knife?

You might be wondering what difference it makes if a knife is a little rusty or broken? According to science and doctors, this is a big threat to your health.

  • Rust entering the stomach: When vegetables or meat are cut with a rusty knife, small particles of iron rust get cut off and get mixed into the food. When this food enters our stomach, it can cause stomach infection, pain and many serious diseases.
  • Home of Bacteria: Knives which are broken or have cracks. Small pieces of food get stuck inside those cracks. No matter how much they are washed, they do not become completely clean. Dangerous bacteria start growing in these cracks, which get mixed with new food that is cut every time. This may cause you food poisoning.
  • Danger of Chemical: Knives that have poor quality paint or coating start peeling off over time. This paint is made of chemicals, which directly reaches your body through your salad or vegetable.

New and strict rules of FSSAI

To eliminate this menace forever, FSSAI has given some strict instructions to all dhaba and restaurant owners, following which has now become mandatory.

  • Use only food-grade knives: Now only high quality (food-grade) and rust-proof stainless steel knives can be used in the kitchen.
  • Throwing away bad knives immediately: If any knife is even slightly rusted, its handle is broken or its edge is chipped, then it has to be immediately thrown out of the kitchen.
  • Regular cleaning necessary: All cutting tools and knives must be thoroughly washed and kept clean after every use. They have to be kept in such a place where moisture does not come on them.

Strict action will be taken if rules are broken

FSSAI has ordered the food safety officers of all the states that during their regular checking, they will now not only check the utensils and expiry date, but will also carefully check the knives used in the kitchen. If a damaged or rusted knife is found in any hotel, restaurant or roadside stall, a heavy fine can be imposed under the Food Safety and Standards Act. The license of the restaurant can also be canceled if the mistake is repeated again and again.
