If you heat it again and again, its aroma goes away and its effect starts loosing. According to many health research, frequent consumption of dishes fried in burnt oil significantly increases the risk of gastric cancer, liver problems and heart disease. Actually, in the process of oxidation, elements like acrolein and polycyclic aromatic hydrocarbons are formed in the oil, which are considered to be the cause of diseases like cancer. According to a research report published in PubMed, many such compounds are formed in repeatedly heated oil, such as polycyclic aromatic hydrocarbons (PAHs), which can pose a risk of cancer.
The biggest danger from street food
People are in great danger from the things found on the roadside, such as samosas and pakodas. The oil in which they are fried is kept fresh by heating them again and again. The shopkeeper does this again and again to use the oil, but it has a deep impact on your health. Toxic compounds are formed in it. There is no harm in eating them immediately, but later gradually they start showing their effect. To prevent this, try to avoid eating fried food outside and prepare and eat snacks in fresh oil at home. Instead of fried foods, include boiled, grilled or baked dishes in your diet.
