
The biggest difference between cow and buffalo meat is found in their color, fat content and texture. These three things are seen first in any initial investigation. Buffalo meat is usually dark red or reddish-brown in color, while cow meat appears to be a bright cherry-red color.

This color difference is due to the elements present in the muscles and blood of the animal. The amount of fat and its color also give distinct identity to both the meats. Buffalo meat has less fat and the fat present is milky white in colour.
