How Long Can You Reuse Cooking Oil: It often happens in homes that after making pakodas, puri or other fried items, oil is left in the pan. Many people reuse this oil so that they do not have to throw it away. But do you know that if this remaining oil is heated again and again or kept for a long time, it can become harmful for health. According to the Food Safety and Standards Authority of India, cooking oil should not be reheated more than three times. On repeated heating, harmful elements called total polar compounds start forming in the oil. If their quantity exceeds 25 percent, then such oil is not considered safe for cooking.
What happens to oil when it is heated repeatedly?
When oil is repeatedly heated on high flame, the process of oxidation starts in it. During this period, harmful elements like aldehydes, free radicals and trans fat start forming. These can damage the cells of the body and consuming such oil for a long time can increase the risk of problems like heart disease, cancer, liver related problems and swelling.
For how many days can the leftover oil be used?
If for some reason you have to reuse the oil, then filter it thoroughly first, so that small particles of food present in it are removed. After this, fill the oil in an airtight vessel and keep it in a cool and dry place. Experts advise that it is better to use such oil within 1 to 2 days and only once. The longer the oil is kept, the greater the risk of it spoiling.

When should oil be thrown away immediately?
If the oil starts to smell strange or rancid, starts foaming, its color becomes too dark or it appears too thick and cloudy when reheated, then it should not be used at all. Such signs indicate that the oil has gone bad and its consumption can be harmful to health.
Keep these things in mind while reusing oil
If you are reusing oil, avoid reheating oils with a low smoke point, such as olive oil or coconut oil. At the same time, always keep the oil filtered and check its smell and color before reusing it. If there is even the slightest doubt that the oil has gone bad, the better option is to throw it away.
